Ingredients

  • 1 kg new potatoes
  • Salt
  • 500 g quark (40%)
  • Pepper
  • 2 bunches chives
  • 3 shallots
  • 1 Garlic clove

Instructions

    Wash the potatoes thoroughly and cook them in plenty of boiling salted water for about 15 minutes.

    Meanwhile, mix the quark with salt and pepper and transfer it to a bowl; sprinkle with a little more pepper.

    Wash the chives, cut into rings. Peel the shallots and slice or chop them into rings. Stir these into the quark or serve in small bowls so everyone can customize their Bibeleskäs. Peel and mince the garlic.

    Drain the potatoes, sprinkle with minced garlic, and serve topped with quark, chives, and shallot rings.
