Rhubarb Walnut Cake

Ingredients

  • 125 g chopped walnuts
  • 100 g sugar
  • 2 Tbsp softened butter
  • 1 tsp ground cinnamon
  • 125 g butter
  • 300 g brown sugar
  • 2 Eggs
  • 500 g flour
  • 2 tsp Baking powder
  • a pinch of salt
  • 125 g yogurt
  • 125 g sour cream
  • 275 g rhubarb (peeled, washed and cut into pieces)
  • butter (for the baking sheet)
  • flour (for the baking sheet)

Instructions

    Combine the walnuts with sugar, softened butter and cinnamon in a bowl until crumbly. Beat the remaining butter with brown sugar and egg until fluffy. Gradually fold in sifted flour with baking powder alternately adding yogurt and sour cream. Add salt and mix into a smooth batter. Fold in the rhubarb.

    Grease the baking sheet and dust it with flour. Spread the batter onto the sheet and level it out. Sprinkle walnut crumbs on top and bake at 180°C (fan) for about 45-50 minutes, checking with a skewer. Let cool on the sheet before cutting into pieces.
