Strawberry Jam Cookies

Ingredients

  • 300 g flour
  • 120 g sugar
  • 1 pinch salt
  • 1 tsp lemon zest
  • 1 egg
  • 200 g butter
  • flour (for work surface)
  • 150 g strawberry jam

Instructions

    Mix the flour, sugar, salt and lemon zest for the dough, sift onto the work surface, create a well in the center, crack the egg into it and distribute the butter in small pieces around the well. Knead all ingredients with your hands into a smooth dough, shape into a ball and wrap in plastic film; refrigerate for 30 minutes.

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Roll out the dough on a floured surface to about 0.4 cm thickness and cut circles of approximately 3.5 cm diameter. From half of the circles, cut a small heart in the center and place the dough circles on a baking sheet lined with parchment paper. Bake in the preheated oven for about 8 minutes until light yellow. Remove, lift from the sheet with the parchment paper and let cool.

    Warm the jam slightly. Spread a little jam on each cookie and cover with a matching counterpart. Press lightly together and allow to dry.
