Star Cookies

Ingredients
- 250 g flour
- 50 g ground, peeled almonds
- 1 pinch salt
- 100 g sugar
- 1 egg
- 200 g butter
- flour (for the work surface)
- 150 g strawberry jam
- 3 tbsp powdered sugar

Mix the flour with the almonds, salt and sugar, sift onto a work surface, press a well in the middle, crack the egg into it and distribute the butter in flakes around the well. Roughly chop all ingredients with a large knife and quickly knead them by hand into a smooth dough. Shape into a ball and wrap in cling film, refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) with upper and lower heat.

Knead the dough again on a floured surface, roll it out to 0.4 cm thickness and cut star shapes (about 5 cm diameter) with an appropriate cutter. Cut a small star from the center of half the stars and place all stars on a baking sheet lined with parchment paper. Knead the remaining dough together and cut more stars.

Bake the stars in the preheated oven for about 8 minutes. Remove, lift the cookies off the parchment onto a cooling rack.

Warm the jam, strain it through a sieve and thinly spread it over the full stars. Dust matching pieces with powdered sugar and place them on top of the jam‑coated stars. Let dry and serve.
