Pistachio and Cream Cheese Cookies

Ingredients
- 100 g ground green pistachios
- 250 g flour
- 1 tsp Baking powder
- 1 tbsp sugar
- 2 tbsp vanilla sugar
- 1 egg yolk
- 0.5 untreated orange (zest)
- 4 drops green food coloring
- 200 g softened butter
- 100 g Strawberries
- 80 g cream cheese (e.g., Philadelphia)','40 ml whipping cream','20 g pistachios (chopped)
Instructions

Mix the ground pistachios with flour and baking powder.

Add vanilla sugar, sugar, egg yolk, orange zest, food coloring, and butter; quickly blend into a smooth dough. Form into a ball, wrap in cling film, and chill in the refrigerator for about 1 hour.

During this time wash, clean, and quarter the strawberries. Whisk the cream cheese with the whipping cream until smooth.

Line two baking sheets with parchment paper and preheat the oven to 180°C (350°F) fan‑forced or conventional heat.

Roll out the dough to about 3 mm thickness and cut into round cookies. Place on the parchment. Bake for 15–20 minutes.

Let cool, then garnish with cream cheese spread and strawberries, and sprinkle chopped pistachios on top.
