Red Lentil Soup

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 200 g starchy potatoes (2 potatoes)
  • 2 tbsp butter
  • 1 l clear broth (instant)
  • 200 g red lentils
  • juice of ½ lemon
  • Salt
  • ground pepper
  • 1 tsp Sambal oelek
  • 1 stalk leeks
  • 120 g smoked trout fillet
  • a few dill sprigs (for garnish)

Instructions

    Peel and dice onion and garlic. Peel, wash, and cube potatoes. Heat 1 tbsp butter in a tall pot. Sauté onion, garlic, and potatoes. Add broth and lentils. Cover and simmer for 30 minutes. After three to four minutes, remove 1–2 tbsp of lentils from the broth and set aside on a plate.

    Puree the soup and season with lemon juice, salt, pepper, and Sambal Oelek. Return the reserved lentils to the pot.

    Finely chop and wash leeks thoroughly. Heat remaining butter and sauté leeks. Cut trout fillet into pieces. Pour soup back in, add leeks and trout, garnish with dill sprigs, and serve.
