- 4 yellow swede cabbage
- 1 tbsp finely chopped onions
- butter
- salt, pepper
- nutmeg
- Meat broth
- flour
- sausage

Remove the outer leaves from four pieces of fine, yellow swede cabbage; cut the heads in half, remove all ribs from the leaves, discard them and blanch the leaves in salted boiling water, then cool with cold water, squeeze out excess liquid and slice several times.

Then sauté a tablespoon of finely chopped onions in a casserole with fresh butter or cooking fat, add the cabbage, season with salt, a little pepper and nutmeg, pour over meat broth, cover and steam until tender.

Just before serving, lightly dust with flour, stir, steam for a few more minutes, then plate elegantly and garnish with sausages, cooked ham, tongue or grilled cutlets etc.
