Avocado Soup

Let yourself taste the avocado soup as a special starter.

Ingredients

  • 2 ripe avocados
  • 1 lemon
  • 200 ml milk
  • 50 ml whipping cream
  • 200 ml vegetable broth
  • 50 ml light white wine
  • Salt
  • Pepper (freshly ground)
  • green Tabasco
  • 50 g trout caviar
  • 4 sprigs dill

Instructions

    Cut the lemon in half and squeeze out the juice. Halve the avocados, remove the pits, scrape the flesh from the skin with a spoon, and mix it with the lemon juice.

    Pour the milk, vegetable broth, and whipping cream into a pot and bring to a brief boil. Add the avocado mixture and white wine, then immediately puree everything together.
