Toast with Hot Goat Cheese

Toasted bread topped with warm goat cheese, fresh berries and lingonberries served on a bed of mixed greens. Delicious starter or light main course.

Ingredients

  • 4 handfuls young salad (e.g., oak leaf, arugula, beetroot)
  • 200 g goat cheese (roll)
  • 4 slices whole grain baguette
  • 2 tbsp honey
  • 1 tsp walnut oil
  • Salt
  • Pepper
  • 0.5 dried thyme
  • 0.5 tsp sweet paprika powder
  • 100 g fresh raspberries
  • 30 g cashew nuts
  • 100 g lingonberries (jar)

Instructions

    Clean, wash and dry the salad; arrange on four plates.

    Slice goat cheese into about 1 cm thick slices and place on bread slices.

  3. 3.

    Line baking paper on a tray. Stack baguette pieces on the tray. Mix honey with walnut oil, a pinch of salt, pepper, thyme and paprika. Brush the cheese slices with this mixture and grill in a preheated oven at 220 °C (broil setting) for about 5 minutes until golden brown.

    Meanwhile rinse raspberries, wash and pat dry. Place cheese toasts on salad plates, garnish with cashew nuts and raspberries, and add one tablespoon of lingonberries to each.
