Apple-Leek Salad by Spoonsparrow – A fresh and light summer recipe!

Ingredients

  • 2 stalks leek
  • 2 ripe apples
  • 4 tbsp orange juice
  • 2 tbsp Lime juice
  • 4 tbsp sesame oil
  • Salt
  • Pepper
  • 50 g walnut kernels
  • 100 g Roquefort
  • 2 tbsp yogurt (1.5% fat)
  • parsley (for garnish)

Instructions

    Clean and wash the leeks, then slice the white and light green parts into thin rings. Wash the apples, quarter them, remove the cores, and cut into slices. Mix with the leek.

    Whisk orange and lime juice with sesame oil, season with salt and pepper. Toss the dressing with the leek‑apple salad and arrange in a bowl.

    Wash parsley, shake dry, and finely chop. Crumble Roquefort. Sprinkle cheese and walnut kernels over the salad and add a spoonful of yogurt on top. Serve the apple‑leek salad garnished with parsley.
