Red Beet Chutney

Ingredients
- 400 g red beet
- Salt
- 150 g onions
- 200 g sour apples (e.g., Boskop)
- 20 g fresh ginger
- 200 ml red wine vinegar
- 50 ml dry red wine
- 3 cloves of mace
- 6 piment seeds
- 5 tbsp raisins
- 5 tbsp cane sugar
Instructions

Wash the beet and cook in salted water for 20 minutes (should still be firm). Drain, peel with rubber gloves, and dice small.

Peel onions and apples; halve onions and slice. Remove apple cores and cube flesh. Peel ginger and finely chop. Bring vinegar, wine, mace, and piment to a boil; add onion and apple and simmer for 10 minutes. Then add beet, ginger, raisins, and cane sugar and simmer another 15 minutes.

Remove mace and piment, season with salt, and fill sterilized jars. Seal tightly, place on a damp dishcloth over the lids, and cool for 15 minutes. Flip and allow to cool completely.

Store in a cool dark place and consume quickly after opening.
