elderberry jam

Ingredients
- 1 kg ripe elderberries
- 100 g peeled almond kernels
- 50 g sugar
- 500 g gelification sugar (2:1)
- Zitronen (Saft)

Wash the elderberries, bring them to a boil with 300 ml water, cover and simmer for 5 minutes, then let cool slightly. Line a sieve with fresh muslin cloth and hang it over a bowl.

Finely chop the almonds. Melt the sugar in a pot and allow it to caramelize lightly brown. Stir in the almonds and keep them golden brown. Transfer to a plate and set aside.

Add elderberry juice with water to make 1 liter and pour back into the pot. Mix in gelification sugar and lemon juice. Bring to a vigorous boil while stirring for 4 minutes, then add the almond mixture.

Fill the jam into hot-washed jars, seal immediately, place on the lids, let cool for about 20 minutes, then invert and allow to set.
