Ingredients

  • 1 kg blackcurrants
  • 300 g sugar
  • 250 ml brandy
  • 1 piece untreated lemon zest
  • 4 cloves
  • 1 cinnamon stick

Instructions

    Wash the currants and pat them dry. Pit about one‑quarter of the berries, then combine with the pits, sugar and 50 ml water in a pot and bring to a boil. Reduce to a syrupy consistency for about 15 minutes, then remove the pits again. Mix the syrup with the brandy.

    Distribute the remaining currants into two sterile jars along with the lemon zest, cloves, and the halved cinnamon stick. Pour the currant‑brandy over the berries so everything is covered (add a little more brandy if desired), seal tightly, and store in a cool, dark place for at least five weeks.
