Ingredients
- 30 g ginger
- 1 kg mandarin
- 200 ml pear juice
- 1 stick cinnamon
- 500 g invert sugar (2;1)

Peel the ginger and cut into thin strips. Peel about one-third of the mandarins, remove all white membranes and fibers, and dice the fruit flesh. Juice the remaining mandarins. Mix with the diced flesh and weigh. Fill to 1 kg with pear juice and add the cinnamon stick and ginger.

Combine with sugar and bring to a vigorous boil in a large pot while stirring. Boil for about 4 minutes, continuously stirring. Perform a gel test and remove the cinnamon stick. Pour into hot-washed jars until full and seal. Leave standing upside down for about 10 minutes, then turn over and let cool.
