Raspberry Jam

Ingredients

  • 1 kg red raspberries
  • 1 untreated orange
  • 800 g gelatin sugar
  • 0.5 cinnamon stick
  • 2 cardamom pods
  • 40 ml cassis

Instructions

    Wash the raspberries, remove stems, place in a pot and gently crush. Wash the orange hot, dry rub, peel without white pith, squeeze juice and mix with sugar into the berries. Let steep for about 30 minutes.

    Fill a spice sachet with cinnamon and cardamom. Add to the berries and bring to a boil while stirring. Simmer for about 5 minutes, perform a setting test, remove the orange peel and sachet, stir in cassis, fill prepared jars, seal tightly, turn lids over after about 15 minutes, then flip again and let cool.
