Filled Waffles

Spoonsparrow filled waffles are a real eye‑catcher and perfect for treating loved ones.
Ingredients
- 3 eggs
- 125 g butter
- 60 g sugar
- 180 g flour
- 50 g starch
- 1 tsp Baking powder
- 1 pinch salt
- 1 tsp lemon zest
- 250 ml milk
- 100 ml sparkling water
- 1 packet vanilla sugar
- 150 g whipping cream
- 150 g Strawberries
- 100 g raspberries
- Berry sauce to taste (ready‑made)

Separate the eggs. Beat the egg whites until stiff peaks form. Cream together butter, sugar, lemon zest, vanilla sugar and salt; fold in the yolks one at a time to create a fluffy mixture. Sift flour with starch and baking powder into the foam, then alternately stir in milk. Fold in sparkling water and the beaten egg whites. Preheat the waffle iron, oil it lightly, pour portions of batter onto it and bake until golden brown. Cool on a wire rack.

Wash and drain strawberries and raspberries. Whip cream; spread over one waffle, drizzle with berry sauce, then top with the second waffle. Serve the filled waffles garnished with fresh berries.
