Raspberry Muffins

Ingredients

  • 250 g raspberries
  • 150 g flour
  • 100 g oats (softening)
  • 2 tsp Baking powder
  • 1 tsp Baking Soda
  • 1 egg
  • 100 g brown sugar
  • 1 pinch cinnamon
  • 1 Tbsp vanilla sugar
  • 80 ml Rapeseed oil
  • 125 g yogurt
  • 80 ml milk
  • 3 tbsp chunky oats

Instructions

    Rinse the raspberries, rinse under cold water and pat dry.

    Preheat the oven to 200°C (400°F) with upper and lower heat. Line a muffin tin with paper cups. In a bowl mix flour with oats, baking powder and baking soda. In another bowl whisk the egg with sugar until frothy. Add cinnamon, vanilla sugar and oil. Then whisk in yogurt and milk and fold into the dry mixture. Gently fold in the raspberries and spoon batter into the muffin cups.

    Bake in the oven for about 30 minutes. Sprinkle oats over the muffins about 10 minutes before the end of baking time. Let cool after baking and serve.
