Cucumber Drink with Wasabi

Ingredients

  • 4 stalks dill
  • 100 g cucumber (1 piece)
  • Sea salt
  • 1 tsp wasabi paste
  • white pepper
  • 50 ml milk (1.5% fat) (ice cold)

Instructions

    Wash the dill and shake it dry; finely chop the tips. Wash the cucumber and pat it dry.

    Cut a bite-sized piece from the cucumber, then slice lengthwise with tight cuts to about two-thirds of its length. Slightly fan the slices out and skewer them on a wooden stick.

    Peel the remaining cucumber, dice it, and blend with dill and a pinch of salt. Pass the mixture through a cloth-lined sieve to extract the liquid.

    Stir the collected cucumber juice with wasabi paste, pepper, and milk; season with salt to taste and pour into a glass. Serve the cucumber drink with the skewer garnish.
