- 600 g chestnuts (maroni)
- 500 ml milk
- 1 vanilla pod
- 100 g powdered sugar
- 30 g cocoa powder
- 20 ml rum
- 200 ml whipped cream
- 1 jar Amarena cherries (ca. 250 g)

Preheat the oven to 200°C fan-forced. Lightly score the chestnuts with a sharp knife, place them on a baking sheet lined with parchment paper and roast in the preheated oven for 15-20 minutes until the shells crack open. Remove, wait a moment, then peel while still hot. Set aside 6 pieces for decoration.

Place the peeled chestnuts in a pot. Add the milk and split vanilla pod, simmer gently for about 30 minutes. Remove the vanilla pod, take the chestnuts out of the milk and press them through a potato masher. Mix in powdered sugar, cocoa, and 2 cl rum, then blend with some of the vanilla-infused milk into a smooth purée.

Serve by spooning the purée into one or more portion bowls, fold the cream to half‑firm consistency and use it to top the chestnut purée. Garnish with Amarena cherries.
