Ingredients
- 300 g whipped cream
- 40 ml Calvados
- 1 EL sugar
- 32 thin French sponge cookies (ready-made, about 6 cm diameter, optionally coated in chocolate)
- 8 tsp apple jam
- 2 Apples
- 2 EL lemon juice
- mint (for garnish)
Instructions

Whip the cream with Calvados and sugar until stiff.

On each of the 8 cookies spoon a bit of Calvados‑cream. Spread apple jam on the cookies and place them on top of the first layer, then add another cookie with some cream and cover with one more cookie.

Add the remaining Calvados‑cream on top.

Wash the apples, remove the core, slice thinly lengthwise, immediately drizzle with lemon juice and place the slices on the apple‑cream towers.

(Optional: let the apple slices steep in hot sugar syrup for a few minutes, lay them on parchment paper and dry in an oven at 120 °C for about 1–1½ hours.)
