Ingredients
- 1 kg red raspberries
- 1 Vanilla bean
- 0.125 l water
- 50 g sugar
- gelatin sugar (1:1 to juice)

Wash the raspberries, strip them from the stems with a fork and simmer with sugar and water while stirring. Pour the fruit with juice into a sieve lined with a cloth and let it drain well in a pot; do not over‑squeeze the fruit.

Cut the vanilla bean lengthwise twice and slice crosswise into about 4 cm strips. Measure out raspberry juice and add an equal amount of gelatin sugar and the vanilla strips to a pot, bring to a boil and simmer for 3 minutes. Pour the hot jam into prepared jars while still warm and seal tightly.
