Ingredients

  • 1 radicchio
  • 1 cucumber
  • 200 g radishes
  • 4 tbsp white balsamic vinegar
  • 6 tbsp Olive oil
  • 20 g basil
  • 1 Garlic clove
  • 1 pinch sugar
  • Salt
  • Pepper (freshly ground)
  • 50 g roasted pine nuts

Instructions

    Wash, trim and slice the radicchio into strips. Wash the cucumber, halve it lengthwise, remove the seeds and cut into thin sticks. Wash, trim and slice the radishes. Combine balsamic vinegar, olive oil, peeled garlic clove and torn basil leaves in a tall narrow glass and whisk until smooth. Season with salt, pepper and sugar.

    Combine radicchio, cucumber sticks and radish slices; arrange on plates. Drizzle dressing over the salad and sprinkle with pine nuts before serving.
