Ingredients

  • 150 g rice
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 50 g black olives (pitted)
  • 300 g mini mozzarella balls
  • olive oil
  • 3 tbsp white balsamic vinegar
  • 1 bundle arugula
  • Salt
  • pepper (ground)
  • Basil

Instructions

    Steam the rice according to package instructions.

    Wash the bell peppers, halve them, remove seeds and white membranes, then roughly dice. Place on a parchment-lined tray, drizzle with olive oil, season with salt and pepper, and grill under a preheated grill for about 4 minutes.

    Wash and trim the arugula.

    Combine everything in a bowl with 3 tbsp oil and balsamic vinegar, seasoning with salt and pepper to taste.
