- 1 medium radicchio
- 2 tsp grated lemon zest (untreated)
- 50 g Pine nuts
- 1 tbsp chopped parsley
- 200 g goat cream cheese
- 1 tbsp Crème fraîche
- Salt
- Cayenne pepper

Clean the radicchio, separate 16 large leaves, lay them flat on a work surface and slice off thick edges. Separate 4 more leaves and finely chop. Toast pine nuts in a dry pan until fragrant, then chop coarsely.

Mix goat cream cheese with crème fraîche, lemon zest, pine nuts, parsley, and chopped radicchio; season with salt and cayenne pepper.

Spread the mixture on the radicchio leaves, leaving a border around the edges. Roll up the leaves, cut crosswise in the middle, arrange on plates and decorate with additional radicchio leaves as swans.
