Ingredients

  • 16 rice paper sheets
  • 1 cucumber
  • 8 fresh shrimp
  • Salt
  • 150 g green asparagus
  • 0.5 bunch Chives
  • 8 lettuce leaves
  • 1 red chili pepper
  • sesame oil
  • 1 tbsp Rice vinegar
  • 1 tsp fish sauce

Instructions

    Soak the rice paper sheets between two damp kitchen towels.

    Wash, deseed and finely chop the chili pepper.

    Peel, deseed and cut the cucumber into sticks. Trim and wash the asparagus, blanch in boiling salted water for 10-15 minutes, then drain well. Wash lettuce leaves and pat dry. Heat 1 tbsp sesame oil and quickly sauté the shrimp, seasoning with salt. Cut chives three times through.

    Whisk together 2 tbsp sesame oil, rice vinegar, chili and fish sauce to make a dipping sauce.

    Place two rice paper sheets on top of each other, lay one lettuce leaf on top and spread slightly flat. Place one shrimp, cucumber sticks, chives and asparagus in the center, drizzle with sauce and roll tightly. Seal the edges with a little water.
