Ingredients

  • 100 g smoked salmon
  • 100 g crème fraîche
  • 100 g cream cheese
  • 2 tbsp chopped dill
  • Salt
  • Pepper (freshly ground)
  • 2 tsp lemon juice
  • 150 g whipping cream
  • 3 sheets gelatin
  • 8 slices crisp biscuits
  • 4 thin slices smoked salmon
  • dill (for garnish)
  • dill flower (for garnish)

Instructions

    Cut the smoked salmon into pieces and blend ¾ of it with the crème fraîche. Finely chop the remaining salmon and mix with the cream cheese, fold in dill, and season with salt, pepper, and lemon juice. Soak the gelatin in cold water for 10 minutes, then add it to a small pot until dissolved over medium heat. Stir the melted gelatin into the salmon mixture, fold in stiffly whipped cream, and refrigerate for about 1 hour.

    Fill a piping bag with a long tip and pipe tight spirals onto the crisp biscuits. Slice the smoked salmon strips lengthwise and use them to garnish the biscuit rounds. Serve decorated with dill and dill flowers.
