Quince Jam with Orange

Ingredients

  • 1 tsp coriander seeds
  • 2.5 kg quinces
  • 5 oranges (including 1 untreated)
  • 500 g gelatin sugar (2:1)
  • 15 g apple pectin

    Roast the coriander in a dry pan until fragrant, remove and crush finely in a mortar. Wash the quinces and brush off the fuzzy skin. Quarter the fruit, remove pits and cut into small pieces. Juice with a juicer and measure about 700 ml of juice.

    Wash the untreated orange hot, dry rub it and grate its peel finely. Squeeze the remaining oranges and measure about 300 ml of juice. Combine both juices with the orange zest in a pot and heat to 50°C. Stir in the sugar, coriander and pectin. Bring to a boil while stirring and simmer for about 4 minutes until bubbling. Perform a gel test and fill prepared jars full. Let cool upside down.
