Quince in Cognac

Ingredients

  • 2 kg quince
  • 500 g sugar
  • 500 g honey
  • 4 tbsp wine vinegar
  • 1 cinnamon stick
  • 750 ml water
  • 125 ml cognac

Instructions

    Peel, pit, quarter the quinces and cut into even slices. Break the cinnamon stick into pieces.

    Combine sugar, honey, wine vinegar, cinnamon pieces, and water in a pot; bring to a boil. Add quince slices and simmer over low heat for 20–30 minutes.

    Remove the fruit and layer it in prepared jars. Continue cooking the liquid until it thickens slightly. Once cooled, stir in cognac and pour the finished syrup over the fruit. Seal the jars immediately and let them cool.
