Ingredients

  • 1 kg sweet cherries (best early hard cherries)
  • 300 g canning sugar
  • 140 ml red wine vinegar
  • 1 cinnamon stick
  • 3 Cloves

Instructions

    Preheat oven to 120 °C.

    Wash cherries, drain, and place stems and pits in a bowl. Boil sugar, vinegar, cinnamon, and cloves with 100 ml water; pour the boiling mixture over the cherries. Press down with a plate, cover, and let sit overnight.

    Pour the juice into a pot, reduce by one quarter, and pour back over the cherries. Let stand overnight. On the third day, repeat the reduction. Add fruit to the syrup, simmer once, fill hot canning jars and seal. Sterilize in the preheated oven for about 10 min.
