Ingredients
- 4 ripe mangoes (for 1 kg flesh)
- 2 cm fresh ginger
- 1 kg pectin sugar (1:1)
- 2 sprigs Mint

Peel the mangoes, cut the flesh away from the pit into small cubes. Peel the ginger and slice it into thin strips. Mix the mango cubes with the sugar and ginger and let them macerate for about 2 hours. Wash the mint, shake dry, pluck the leaves and chop them. Bring the mango cubes, sugar and ginger to a boil in a pot and simmer for 4 minutes. Stir in the mint, fill the jam into well-sanitized jars, seal tightly and place upside down for 10 minutes. Flip, let cool and store in a cool dark place.
