(1)

Ingredients

  • 2 kg quince (yielding about 1000 ml juice)
  • 40 ml lemon juice
  • 2 tbsp honey
  • 1 tsp agar-agar

Instructions

  1. 1.

Wash the quinces, remove the stem and blossom, and cut into cubes with skin and core. Cover the quinces with 1½ liters of water, add the lemon juice, and bring to a boil. Cook until soft for about 45 minutes. Then line a large sieve with a damp muslin cloth, place it over a big pot, pour in the cooked quince mixture, and let the juice drain through. If necessary, press down to allow all juice to pass. Let the quince juice cool completely.

  2. 2.

Measure 1000 ml of the cooled juice into a measuring cup, transfer to a large pot, add honey, and bring to a boil. Stir in agar-agar powder and simmer for about 2 more minutes. Remove from heat, stir again, and fill sterile jars. The mixture should set slowly as it cools.
