Ingredients

  • 1 piece orange zest (unprocessed)
  • 200 ml apple juice
  • 2 tbsp lemon juice
  • 2 cm ginger
  • 1.2 kg apples (e.g., Elstar or Royal Gala)
  • 500 g pectin sugar (3:1)
  • 70 ml Calvados
  • 70 g raisins

Instructions

    Cut the orange zest into very fine strips, then dice finely. Add apple juice and lemon juice with the orange zest to a pot. Peel and dice ginger finely, add it. Soak raisins in Calvados.

    Peel apples, quarter them, remove core. Dice apples or grate directly into pot with a coarse grater. Add pectin sugar and mix well.

    Heat while stirring and simmer vigorously for 4 minutes, stirring constantly.

    Add the soaked raisins and Calvados. Boil briefly again then immediately fill hot-splashed jars to the brim. Seal with screw caps right away and let cool.
