Ingredients

  • 1 red chili pepper
  • 1 L apple juice (cloudy or homemade)
  • 500 g gelatinizing sugar (2:1)
  • 4 tbsp Lemon juice
  • 1 tbsp paprika powder (hot)

    Wash the chili pepper, cut it lengthwise, deseed, remove the white membranes and dice finely.

    Bring the apple juice with gelatinizing sugar in a pot over high heat while stirring until it boils; simmer for 4 minutes. Stir in lemon juice, paprika powder, and diced chili. Remove from heat and immediately fill sterilized jars to the brim. Seal tightly, invert the jars for about 10 minutes to cool, then turn them upright to finish cooling.
