Ingredients
- 800 g apples
- 200 ml orange juice
- 1 Vanilla bean
- 500 g invert sugar (2:1)
- 60 g walnut kernels
Instructions

Wash, peel, core, and dice the apples. Mix with orange juice in a large pot.

Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the apples.

Stir in the invert sugar and cover; let it infuse for about 2 hours.

Coarsely chop the walnuts.

Bring the apple mixture to a boil and simmer gently for about 4 minutes while stirring. Perform a gel test, remove the vanilla pod, and ladle the preserve into hot sterilized jars.

Let the jars sit upside down for about 10 minutes, then turn them right side up and allow to cool.
