Quince Confection

Ingredients

  • 300 g quince
  • 250 g coconut blossom sugar
  • 0.5 lemon (juice)

Instructions

    Wash and dry the quinces, then peel them. Remove stems and blossoms. Cut the quinces into halves or quarters and place them in a pot. Cover with water, bring to a boil, and simmer for about 30 minutes until soft. Afterwards remove the quinces from the water and let them cool.

    Peel and pit the fruit. Weigh the flesh and combine it with an equal amount of coconut blossom sugar in a pot. Mash with a potato masher and bring to a boil. Add lemon juice and cook over low heat, stirring regularly until the mixture becomes a thick paste (about 30 minutes). Spread the puree onto a baking sheet lined with parchment paper and let it dry for 1–2 days in a cool place. Then cut into cubes and, if desired, toss them in coconut blossom sugar.
