Asparagus Omelette with Parmesan

Ingredients

  • 500 g Green Asparagus
  • 2 tbsp olive oil
  • 0.5 red bell pepper
  • 1 red chili pepper
  • 4 eggs
  • 6 tbsp heavy cream
  • 40 g grated Parmesan
  • 1 bunch chopped basil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp chives

Instructions

    Wash the asparagus, peel the lower third, trim the ends and cut into about 2 cm pieces. Wash, deseed, and finely chop the bell pepper; finely mince the chili pepper. Sauté the asparagus, bell pepper pieces, and chili in hot oil over low heat for about 5 minutes while stirring.

    Beat the eggs in a bowl, then stir in the cream, parmesan, and basil. Season with salt and pepper, pour over the sautéed vegetables. Cover and cook on low heat for about 10 minutes until set. Cut the omelette into pieces and sprinkle with chives before serving.
