Ingredients

  • 200 g puff pastry (cold)
  • 20 g soft butter
  • 60 g sugar
  • 2 Eggs
  • 1 tsp grated lemon zest
  • 500 g quark
  • 30 g Raisins
  • 1 small can of clementines
  • liquid butter for brushing

Instructions

    Drain and let the clementines dry. Separate the eggs. Beat the egg whites until stiff peaks form. Whisk the yolks with sugar and butter until fluffy. Stir in lemon zest and quark. Fold in raisins and whipped egg whites. Roll out the puff pastry, spread the quark filling on it, leaving a 3 cm border all around.

    Distribute the clementines over the quark filling, fold the pastry edges inward on three sides, then loosely roll towards the fourth side without tearing. Place on a baking sheet lined with parchment paper, brush with liquid butter, and bake in a preheated oven at 180 °C (convection) for about 40 minutes (test with a skewer). Remove and let cool.
