- 250 g flour
- 125 g butter
- 90 g sugar
- 1 egg
- 1 pinch salt
- 1 can apricots (drained weight 480 g)
- 500 g Low-fat quark
- 100 g sugar
- 1 pinch salt
- 200 g whipping cream
- 4 eggs
- 1 tsp grated lemon zest

Sift flour onto a work surface, mix with salt and sugar, then press a well in the center. Cut cold butter into small pieces and distribute around the well; add the egg, about 3 tbsp lukewarm water, and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, shape into a ball, wrap in cling film, and chill for about 30 minutes.

Preheat oven to 200°C (400°F) fan‑forced. Drain apricots. Whisk quark with sugar, salt, cream, eggs, and lemon zest. Roll out dough thinly between two sheets of parchment paper. Butter a pan, line with dough, shaping an edge and trimming it straight.

Fill the pan with the quark mixture, smooth the surface, and arrange apricots cut‑side down on top, pressing lightly. Bake in preheated oven for 40–45 minutes. Remove, let cool slightly in the pan, then release and allow to cool completely. Dust with powdered sugar before serving.
