Ingredients
- 40 g butter (or margarine)
- 60 g sugar
- 2 Eggs
- a few drops baking oil
- bitter almond or lemon
- 1 tsp salt
- 500 g Low-fat quark
- 250 g whole wheat flour
- 3 tbsp baking powder (Backin)
- 125 g currants
- 75 g butter (or margarine)
Instructions

Whisk 40 g butter or margarine and gradually add 60 g sugar, 2 eggs, a few drops of baking oil, bitter almond or lemon, 1 tsp salt and 500 g quark.

Mix 250 g whole wheat flour with 3 tbsp baking powder (Backin), sift, and fold into the batter spoonful by spoonful.

Sift 125 g currants and fold them in at the end.

Heat a little of the 75 g butter or margarine in a long-handled pan, pour the batter spoonfuls into the pan and press flat. Fry the puffers brown on both sides. Baking time: about 6 minutes.
