Ingredients
- 100 g low‑fat quark
- 1 tbsp milk
- 2 tbsp sugar
- 1 packet vanilla sugar
- 250 g strawberries
- 100 ml sparkling wine
- 4 sheets gelatin
- 1 tbsp Lemon Juice
- lemon balm leaf

Whisk the quark with milk, sugar and vanilla sugar until smooth. Soak the gelatin. Wash, trim and roughly chop the strawberries; puree them with lemon juice and sparkling wine (reserve 2 tablespoons for garnish).

Sift the strawberry purée through a fine sieve; dissolve the gelatin in 1–2 tbsp hot water, stir into some of the purée, then quickly fold the gelatin mixture into the remaining purée. Spoon two‑thirds of the purée into dessert cups, spread the quark cream over it, top with the reserved purée, strawberries and lemon balm leaf, chill well before serving.
