Ingredients

  • 250 ml pine sap
  • Juice of 1/2 lemon
  • 500 g sugar
  • 100 ml finely chopped fresh pine needles

Instructions

    Wash the pine shoots and bring them to a boil in a pot with 500 ml water and lemon juice, then simmer for about 15 minutes.

    Strain the shoots and return the liquid with sugar to the pot. Let it cook gently until it has a syrupy consistency. Be careful: the liquid must not get too hot or the syrup will caramelize.

    Cool the syrup and stir in the finely chopped pine needles only after it is completely cold. Store in clean jars in a cool place.
