Quark Tart with Apricots

Ingredients

  • 220 g flour
  • 1 pinch salt
  • 80 g sugar
  • 2 tbsp vanilla sugar
  • 120 g cold butter
  • 1 egg

  • 1 can apricots (approx. 500 g drained weight)
  • 400 g quark
  • 200 g Cream cheese
  • 80 g sugar
  • 150 ml whipping cream
  • 4 eggs
  • 1 untreated orange (zest)
  • 50 g orange jam
  • 20 ml apricot liqueur
  • powdered sugar

Instructions

    Sift flour onto a work surface, mix with salt, sugar and vanilla sugar, then press a well in the center. Cut butter into small pieces, spread on the flour rim, add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead by hand into dough, adjusting flour slightly if needed. Shape into a ball, wrap in plastic wrap and chill for about 1 hour.

    Drain apricots well and reserve some juice. Mix drained quark with cream cheese, sugar, 3-4 tbsp apricot juice, whipping cream, eggs and orange zest until smooth.

    Preheat oven to 200°C (400°F) with upper and lower heat. Butter the tart pan and dust with flour.

    Roll out dough and line the tart pan. Pour in the quark filling, spread smoothly and top with apricots cut side down. Bake for about 45 minutes. If the tart darkens too much, cover with foil.

    Warm orange jam with apricot liqueur in a small pot until melted. Remove tart from oven and brush warm glaze over it while still hot. Let cool, then slice into pieces and dust with powdered sugar before serving.
