Ingredients

  • 500 g quark
  • 150 g blueberries
  • 150 g Gooseberries
  • 150 g raspberries
  • 150 g blackberries
  • 1 vanilla pod (scraped out the seed)
  • 4 eggs
  • 50 g cornstarch
  • 175 g powdered sugar
  • Salt
  • 2 tbsp lime zest

Instructions

    Wash and dry the blueberries and gooseberries.

    Strip the stems from the gooseberries. Rinse the raspberries and blackberries. Place all berries on a parchment-lined tray and freeze for about 15 minutes.

    Separate the eggs. Beat together yolks, quark, vanilla seed, cornstarch, and 75 g powdered sugar. Whisk egg whites with a pinch of salt and 100 g powdered sugar until very stiff. Gently fold the stiff whites into the quark mixture.

    Fold in three‑quarters of the berries carefully and divide the batter among four small baking dishes (or one large gratin dish). Sprinkle the remaining berries on top. Bake in a preheated oven at 180 °C (middle rack) for about 30 minutes. Let rest in the turned‑off oven with the door slightly open for another 10 minutes. Garnish with lime zest and dust with powdered sugar before serving.
