Ingredients

  • 200 g quark (20 %)
  • 3 egg yolks
  • vanilla pods
  • untreated lemons (zest)
  • 4 egg whites
  • 50 g sugar
  • butter (for the molds)
  • 1 tsp Cornstarch
  • powdered sugar

Instructions

    Grease four small soufflé molds and dust with sugar, then place in the freezer.

    Whisk quark, egg yolks, vanilla essence and lemon zest together. Beat egg whites with sugar until stiff peaks form, then fold in cornstarch. Gently fold the meringue into the yolk mixture.

    Fill the buttered and sugared molds with batter. Preheat oven to 200°C and bake soufflés for about 20 minutes.

    Serve on dessert plates as desired, dusting with powdered sugar.
