Quark Soufflé

Ingredients
- 1 EL softened butter
- 140 g sugar
- 3 eggs
- 1 TL lime zest
- 100 g low-fat quark
- 2 packets vanilla sugar
- 1 EL cornstarch
- 1 large papaya
- powdered sugar

Fill the oven’s fat pan about 2 cm high with water and place it on the lowest rack in the oven, preheat to 180°C.

Brush six soufflé cups with softened butter and sprinkle each with 1 EL sugar. Separate the eggs; beat the whites until stiff, adding half the sugar gradually until a firm mass forms. Beat the yolks with lime zest and remaining sugar until frothy. Fold in the quark, then fold in the beaten whites, and fill the cups. Bake in a water bath for about 20 minutes, do not open the oven (convection unsuitable).

Meanwhile peel and deseed the papaya; puree two-thirds of the flesh with a little sugar. Slice or grate the remaining fruit into thin pieces. Remove the soufflés from the oven and immediately plate them with papaya slices and mousse, dust with powdered sugar, and serve.
