Quark Strawberry Cream

A fresh and creamy dessert featuring quark and strawberries, perfect for a light treat. Try this recipe and many others from Spoonsparrow!
Ingredients
- 500 g strawberries
- 2 egg yolks
- 3 tbsp sugar
- 250 g quark
- 100 ml whipping cream
- 5 sheets gelatin
- chopped mint (for garnish)

Soak the gelatin in cold water.

Wash, clean, and cut the strawberries into halves or quarters depending on size. Puree 300 g of them finely.

Whisk the egg yolks with sugar until fluffy. Bring the pureed strawberries to a boil once, remove from heat, stir in the squeezed gelatin, then gradually fold into the egg yolk mixture while constantly stirring. Fold in the quark and let cool (add more sugar if desired). Just before the mixture starts to set, fold in the whipped cream, pour into a bowl, and chill for at least 3 hours.

Before serving cut small mounds and garnish with remaining strawberries and mint.
