Mocha Cream with Sour Cherries

Ingredients

  • 80 g dark chocolate
  • 200 g whipping cream
  • 6 tsp instant coffee powder
  • 250 g quark (cream cheese)
  • 3 tbsp sugar
  • 200 g sour cherries
  • 50 g mocha beans (alternatively: chocolate shavings)

Instructions

    Break the dark chocolate into pieces and place it with 2 Tbsp water in a small saucepan. Melt the chocolate slowly over a bain‑marie, then let it cool.

    Whip the cream to stiff peaks in a bowl and fold in the cooled but still liquid chocolate.

    Dissolve the coffee powder in 2 Tbsp warm water. In a large bowl mix the quark first with sugar, then with the coffee. Pour the chocolate cream over it and stir thoroughly until well combined.

    Wash, drain, and pit the sour cherries, reserving the juice. Immediately fold the cherries and their juice into the mocha cream and pour the mixture into tall glasses. Garnish with mocha beans.
