Ingredients

  • 4 sheets gelatin
  • 2 Eggs
  • 1 Vanilla bean
  • 2 tbsp lemon juice
  • 60 g powdered sugar (birch sugar)
  • 200 g low‑fat quark
  • 150 ml whipping cream
  • 250 g mixed fresh berries (e.g., raspberries and blueberries)
  • 4 mint sprigs

Instructions

    Soak the gelatin in cold water. Separate the eggs; whisk the yolks with the split vanilla bean, lemon juice, and powdered sugar over a hot water bath until creamy. Stir in the squeezed gelatin and let it dissolve. Remove from heat, beat cold, discard the vanilla bean, and fold in the quark. Whip the cream stiffly and fold into the mixture.

    Whisk the egg whites stiffly and fold them into the cream. Pour the mousse into a bowl, cover, and chill for at least 3 hours. Rinse, wash, and pat dry the berries. Cut small portions from the mousse, arrange on a plate with berries and a mint sprig, and dust with powdered sugar before serving.
