Ingredients

  • 250 g yogurt (3.5% fat)
  • 3 tbsp quark (about 60 g)
  • 200 g whipping cream
  • 2 tsp raw cane sugar (about 10 g)
  • 500 g Blueberries
  • 1 tsp cinnamon (about 5 g)
  • 6 spelt or whole‑grain biscuits
  • 50 ml white grape juice
  • 2 stalks lemon balm (for garnish)

Instructions

    Whisk yogurt and quark together in a bowl until smooth. In a separate bowl whip the cream with 1 tsp sugar until very stiff, then fold into the yogurt mixture.

    Rinse, wash, and drain the blueberries. Combine 400 g of blueberries with remaining sugar, cinnamon, and 1 tbsp water in a pot; simmer covered over medium heat for 2 minutes. Remove from heat and let cool.

    Crush biscuits coarsely, drizzle with grape juice. Wash lemon balm, shake dry, and pluck leaves.

    Layer 1 tbsp blueberries into each of four glasses. Add biscuit crumbs, yogurt‑cream mixture, and more blueberries. Repeat until ingredients are used up. Finish with a topping of yogurt‑cream and fresh blueberries. Garnish with lemon balm leaves before serving.
