Ingredients

  • 2 Apples
  • 2 pears
  • 250 ml apple juice
  • 150 g sugar
  • 1 tbsp butter
  • 3 eggs
  • 400 g quark
  • 1 packet vanilla sugar
  • 1 tsp lemon juice
  • Salt

    Peel apples and pears, remove cores, and cut into pieces. Cook with apple juice and 50 g sugar over medium heat for 8 minutes until tender. Let cool. Preheat oven to 250°C. Butter four small soufflé molds and set aside.

    Separate eggs. Mix yolks, quark, vanilla sugar, lemon juice, and remaining sugar together. Beat egg whites with a pinch of salt until stiff peaks form. Fold one-third of the meringue into the quark mixture. Gently fold in the rest of the meringue. Fill the molds with the quark batter and bake in a water bath for 25 minutes at 200°C fan‑forced. Remove soufflés from the water bath, let cool briefly, loosen from the sides with a knife, and serve on plates. Serve with fruit puree.
